刺苞菜薊Cynara cardunculus
(俗名：朝鮮薊；菜薊 Artichoke)
刺苞菜薊(Cynara cardunculus是可食用的。如果適當處理，葉柄和根也可以食用(Kelly & Pepper, 1996)。刺苞菜薊也已用於藥用目的(Adly, 1985; Wiklund, 1993)。它是菊粉、羥基肉桂酸酯和水飛薊素的來源(Curt et al., 2002; Grammelis et al., 2008)。後兩種是在葉子中發現的苦味化合物，可改善肝臟和膽囊的功能，並刺激消化液(尤其是膽汁)的分泌，並降低血液中的膽固醇(Grammelis et al., 2008)。刺苞菜薊的乾燥小花已被用於使牛奶凝結(Mathews, 1830; Wiklund, 1993)。(~全球入侵物種資料庫)
Artichoke plants are muscular, stout-stemmed and head-high, with deeply lobed blue-green leaves. Their flower heads are cloaked in leathery bracts, especially adapted leaves to protect the flowers that develop inside. Although they are rarely allowed to blossom, the develop into splendid fist-size blooms, bluish-purple, sweetly fragrant and long-lasting. Look closely and you will see that flower head is composed of hundreds of individual shimmering florets.*
朝鮮薊長得強壯，莖枝粗壯、植株高大，葉子藍綠色，葉緣深裂。
革質苞片包覆住花頭，特化的葉狀物保護著內部的花。
朝鮮薊一般不等到花開就被摘來做菜。其實，它的花一旦開了有拳頭般大小，花色藍紫，花香持久甜郁。
朝鮮薊的花頭，是由數百個閃閃發亮的小花所組成的。

朝鮮薊的花，萃取出一種酵素(enzymes), 可以使牛奶結凍，是西班牙和義大利的傳統美食，吃起來有些微的苦味兒。

Most artichokes are eaten before the flower heads have a chance to open. Obviously, they taste best when their hearts are grilled with a hint of orange, but, steamed whole and accompanied by lashing of melted butter from a communal dish, the dipped bracts make a sociable and engagingly messy treat. Finally reaching the secret, tender heart makes the world feel more agreeable; the artichoke’s unusual chemistry confuses the tongue so that even plain water tastes sweet afterwards.*
趁朝鮮薊未開花，將花心煎熟加上橘子汁，味道絕美。
如果直接蒸煮，澆上大量的奶油，放到大盤子上，整個花苞就成為大家動手共同分享的佳餚了。
花心有特別的化學物質，使得舌頭在吃了之後，光喝水就會感到是甜的。

吃了朝鮮薊的花心之後，讓人的舌頭縱使喝白開水，都會以為喝的是甜的。類似的經驗，我曾在喝(法蘭絨過濾的)咖啡之後，有同樣的經驗。舌頭的味蕾因爲被「曚騙」，白開水都變成甜的。
喝完咖啡再喝白開水感到甜味，是因為味覺的「對比效應」造成的錯覺。濃郁的咖啡苦味在口腔中殘留，之後喝下的無色無味的白開水，因為與之前的苦味形成強烈對比，反而會讓大腦誤以為水變甜了。這種現象並非咖啡「回甘」的真實甜味。 (~Google)
原來如此。
不知朝鮮薊是否也是一樣的「對比效應」，還是真的有什麼特別的化學物質呢？
刺苞菜薊，是菜薊屬(Cynara)和我們熟知的薊屬(Cirsium)，在分類上是不同的屬，但是都是菊科(Asteraceae)之下的植物。
