The dish is known in Cyprus as ambelopoulia; aficionados chomp down each small morsel in a few bone-and-guts-crunching bites.<\/p>\n\n\n\n

Ambelopoulia and songbird trapping are old traditions in Cyprus, something passed down generationally and conducted mostly with lime sticks, which while gruesome are not as ruthlessly efficient at catching large numbers of birds as the mist nets that trappers increasingly favor. For an island less than two-thirds the size of Connecticut, the toll that ambelopoulia trapping exacts on the migrants of Cyprus is staggering. <\/p>\n\n\n\n

\u300c\u5b89\u8c9d\u6d1b\u666e\u5229\u4e9e\u300d\u9019\u9053\u83dc\u548c\u6355\u6349\u9cf4\u79bd\u662f\u585e\u6d66\u8def\u65af\u7684\u50b3\u7d71\uff0c\u4ee3\u4ee3\u76f8\u50b3\uff0c\u4e3b\u8981\u662f\u7528\u6cbe\u4e86\u9ecf\u6db2\u7684\u679d\u689d\u9ecf\u9ce5\uff0c\u4f46\u6bd4\u4e0d\u4e0a\u53ef\u4ee5\u6293\u4e0a\u5927\u91cf\u9ce5\u985e\u65e2\u6b98\u9177\u53c8\u6709\u6548\u7387\u7684\u9727\u7db2\uff0c\u56e0\u6b64\u5f8c\u4f86\u6355\u9ce5\u7684\u4eba\u90fd\u6bd4\u8f03\u559c\u6b61\u7528\u9727\u7db2\u3002\u5c31\u4e00\u500b\u9762\u7a4d\u53ea\u6709\u7f8e\u570b\u5eb7\u4e43\u72c4\u514b\u5dde\u4e09\u5206\u4e4b\u4e8c\u7684\u5c0f\u5cf6(\u6309\uff1a\u9762\u7a4d9,251\u5e73\u65b9\u516c\u91cc\uff09\uff0c\u6355\u5019\u9ce5\u4f86\u70f9\u8abf\u300c\u5b89\u8c9d\u6d1b\u666e\u5229\u4e9e\u300d\u9019\u9053\u83dc\u6240\u9020\u6210\u7684\u640d\u5bb3\u7a0b\u5ea6\uff0c\u4ee4\u4eba\u611f\u5230\u96e3\u4ee5\u7f6e\u4fe1\u3002<\/p>\n\n\n\n

BirdLife estimated in 2016 that trappers were killing between 1.3 million and 3.2 million birds annually in Cyprus, making this small island one of the worst places in the Mediterranean for such slaughter\u2014in fact, Cyprus is the worst on a per capita basis, given its relatively light human population. It also holds three of the dozen worst killing sites anywhere in the Mediterranean, which between them account for as many as 2.3 million dead songbirds each year. <\/p>\n\n\n\n

BirdLife\u57282016\u5e74\u4f30\u8a08\uff0c\u6bcf\u5e74\u5728\u585e\u6d66\u8def\u65af\u6355\u6bba\u7684\u9ce5\u4ecb\u65bc1.3-3.2\u767e\u842c\u96bb\uff0c\u4f7f\u5f97\u9019\u500b\u5c0f\u5cf6\u6210\u70ba\u5730\u4e2d\u6d77\u5730\u5340\u6700\u7cdf\u7cd5\u7684\u9ce5\u985e\u5c60\u5834\u4e4b\u4e00\u3002\u5176\u5be6\uff0c\u56e0\u70ba\u585e\u6d66\u8def\u65af\u4eba\u53e3\u76f8\u5c0d\u7a00\u5c11\uff0c\u5e73\u5747\u6bcf\u4eba\u7684\u6355\u6bba\u6578\u5c31\u662f\u6700\u9ad8\u7684\u4e86\u3002\u5730\u4e2d\u6d7712\u500b\u9cf4\u79bd\u88ab\u6355\u6bba\u5f97\u6700\u53b2\u5bb3\u7684\u5730\u5340\u4e4b\u4e2d\uff0c\u585e\u6d66\u8def\u65af\u5c31\u4f54\u4e86\u5176\u4e2d\u76843\u500b\u5730\u65b9\u3002\u901912\u500b\u5730\u5340\uff0c\u6bcf\u5e74\u6709\u9ad8\u90542.3\u767e\u842c\u96bb\u9cf4\u79bd\u88ab\u6355\u6bba\u3002<\/p>\n\n\n\n

But Cyprus is far from the only death trap. Syrians illegally kill 3.9 million birds a year, while the annual carnage in Lebanon is 2.4 million, and Egypt another 5.4 million birds (though the BirdLife researchers admit the true number in all these places could be almost twice as high). If that seems somehow unsurprising for such battle-scarred and troubled corners of the world as Syria and Egypt, consider that arguably the single most dangerous place to be a bird in Europe is actually in peacefully civilized Italy, where some 5.6 million passerines are killed each year, the ingredients for traditional dishes like mumbut, spited and grilled songbiras, or polenta osei, which in is traditional form is cornmeal mush topped with whole grilled birds. The French gobble another half a million birds or so- thrushes, for example, lured with scarlet clumps of rowan berries and strangled by simple nooses of horsehair, a trapping specialty in the Ardennes region near the Belgian border, where some 100,000 thrushes die each year as French authorities turn a blind eye.<\/p>\n\n\n\n

Most famously, though, the French have long relished the ortolan bunting, a handsome, six-inch-long bird with a peach-colored breast, pale yellow throat, and dark mustache marks; yellow eye-rings give it a slightly startled expression, but the French traditionally revered the ortolan for its meat, not its appearance. Trapped in August and September on their way to Africa and kept in the dark to scramble their natural rhythms (at one time, they were blinded to accomplish the sam\u00e9 thing), the birds feed constantly until they are bulging with fat, then are drowned in Armagnac brandy, plucked and baked whole in a sizzling hot earthenware cassole. The diner\u2014head and shoulders draped with a large white napkin, allegedly “to hide from the sight of God” but more practically to trap the aromas and block any splatter\u2014 severs the head with a snap of the front teeth, then chews the rest of the bird in a cascade of searing grease and juices, grinding up bones and all. It is considered the epitome of traditional French gastronomy. <\/p>\n\n\n\n

\u6700\u6709\u540d\u7684(\u6700\u60e1\u540d\u662d\u5f70\u7684)\u662f\uff0c\u6cd5\u570b\u4eba\u9577\u671f\u4ee5\u4f86\u5c0d\u5703\u9d50\u7684\u8ff7\u6200\u3002\u5703\u9d50\u662f6\u82f1\u540b\u9577(\u7d0415\u516c\u5206)\u7684\u6f02\u4eae\u9ce5\u5152\uff0c\u6709\u6843\u8272\u7684\u80f8\u812f\u3001\u6de1\u9ec3\u8272\u7684\u8116\u5b50\u3001\u6df1\u8272\u7684\u9b0d\u6e23\uff0c\u9ec3\u8272\u7684\u773c\u74b0\u8868\u73fe\u51fa\u597d\u50cf\u5403\u9a5a\u7684\u795e\u60c5\uff0c\u4f46\u662f\u6cd5\u570b\u4eba\u50b3\u7d71\u4e0a\u662f\u628a\u5703\u9d50\u7576\u8089\u4f86\u5403\u7684\uff0c\u4ed6\u5011\u4e26\u4e0d\u662f\u6b23\u8cde\u5b83\u5011\u6f02\u4eae\u7684\u5916\u8868\u3002\u5728\u516b\u3001\u4e5d\u6708\u9593\uff0c\u7576\u5703\u9d50\u5f80\u975e\u6d32\u98db\u7684\u6642\u5019\uff0c\u52a0\u4ee5\u8a98\u6355\u7136\u5f8c\u95dc\u5728\u6697\u5ba4\u4f86\u6df7\u4e82\u9ce5\u7684\u81ea\u7136\u6642\u5dee(\u66fe\u7d93\u4e00\u5ea6\u7684\u505a\u6cd5\uff0c\u662f\u5f04\u778e\u5703\u9d50\u7684\u773c\u775b\u4f86\u9054\u5230\u540c\u6a23\u7684\u6548\u679c)\uff0c\u63a5\u8457\u5703\u9d50\u88ab\u4e0d\u65b7\u9935\u98df\uff0c\u76f4\u5230\u8eab\u9ad4\u81a8\u8139\u5145\u6eff\u8102\u80aa\u70ba\u6b62\uff0c\u4e4b\u5f8c\u6d78\u5165\u4e9e\u6587\u9091\u767d\u862d\u5730\u4e2d\u6df9\u6b7b\uff0c\u62d4\u5b8c\u6bdb\u6574\u96bb\u653e\u5728\u6ecb\u6ecb\u4f5c\u97ff\u7684\u71b1\u7802\u934b\u4e2d\u71d2\u70e4\u3002\u98df\u5ba2\u5728\u5403\u9019\u9053\u83dc\u7684\u6642\u5019\uff0c\u982d\u548c\u80a9\u8180\u6703\u7528\u4e00\u500b\u5f88\u5927\u7684\u767d\u9910\u5dfe\u7f69\u4f4f\uff0c\u64da\u8aaa\u662f\u70ba\u4e86\u300c\u8eb2\u907f\u4e0a\u5e1d\u7684\u773c\u775b\u300d\uff0c\u800c\u5176\u5be6\u662f\u70ba\u4e86\u628a\u90a3\u9053\u83dc\u7684\u9999\u6c23\u805a\u650f\u8d77\u4f86\uff0c\u4e26\u4e14\u9632\u6b62\u6c41\u6db2\u5230\u8655\u5674\u6ffa\u3002\u5403\u7684\u6642\u5019\uff0c\u7528\u9580\u7259\u628a\u9ce5\u982d\u54ac\u4e0b\u4f86\uff0c\u7136\u5f8c\u5480\u56bc\u5269\u4e0b\u7684\u9ce5\u8eab\uff0c\u4e0d\u65b7\u6d41\u8457\u6cb9\u8102\u548c\u6c41\u6db2\uff0c\u9023\u9ce5\u7684\u9aa8\u982d\u90fd\u5168\u90e8\u4e00\u8d77\u54ac\u788e\u5403\u4e0b\u3002\u54b8\u8a8d\u70ba\u9019\u9053\u83dc\u662f\u6cd5\u5f0f\u7f8e\u98df\u7684\u7e2e\u5f71\u3002<\/p>\n\n\n\n

Former French president Fran\u00e7ois Mitterrand, dying of cancer in 1996, ate two ortolans as part of his last meal, refusing all else thereafter until he died eight days later. The late Anthony Bourdain called ortolan “the grand slam of rare and forbidden meals,” and recounted an illicit dinner with a number of fellow gourmands: “With every bite, as the thin bones and layers of fat, meat, skin and organs compact in on themselves, there are sublime dribbles of varied and wondrous ancient flavors: figs, Armagnac, dark flesh slightly infused with the salty taste of my own blood as my mouth is pricked by the sharp bones.” <\/p>\n\n\n\n

\u524d\u6cd5\u570b\u7e3d\u7d71\u5bc6\u7279\u6717\u57281996\u5e74\u6b7b\u65bc\u764c\u75c7\u524d\u5915\uff0c\u5403\u4e86\u5169\u96bb\u5703\u9d50\u7576\u4f5c\u4ed6\u6b7b\u524d\u7684\u6700\u5f8c\u4e00\u9910\uff0c\u5728\u90a3\u4e4b\u5f8c\u4ed6\u5c31\u62d2\u7d55\u518d\u5403\u4efb\u4f55\u5176\u4ed6\u6771\u897f\u76f4\u52308\u5929\u4e4b\u5f8c\u53bb\u4e16\u3002\u7f8e\u570b\u540d\u5eda\u5b89\u6771\u5c3c\u2027\u6ce2\u767b\uff08Anthony Bourdain\uff09\u7a31\u5703\u9d50\u6599\u7406\u662f\uff1a\u300c\u7a00\u6709\u800c\u4e14\u7981\u5fcc\u7684\u5927\u6eff\u8cab\u98df\u7269\u300d\uff0c\u4ed6\u56de\u60f3\u548c\u5e7e\u4f4d\u7f8e\u98df\u5bb6\u540c\u597d\u5728\u4e00\u500b\u5929\u7406\u4e0d\u5bb9\u7684\u9910\u6703\u5403\u5703\u9d50\u7684\u60c5\u666f\uff0c\u300c\u6bcf\u4e00\u53e3\uff0c\u8584\u8584\u7684\u9aa8\u982d\u548c\u8102\u80aa\u3001\u8089\u3001\u76ae\u3001\u5167\u81df\u7b49\u7b49\u5c64\u5c64\u7dca\u5bc6\u758a\u5728\u4e00\u8d77\uff0c\u6607\u83ef\u6d41\u6dcc\u8457\u5404\u7a2e\u5947\u5999\u7684\u539f\u59cb\u98a8\u5473\uff1a\u7121\u82b1\u679c\u3001\u4e9e\u6587\u9091\u767d\u862d\u5730\uff0c\u6697\u8272\u7684\u9ce5\u8089\u5145\u6eff\u4e86\u6211\u7684\u5634\u5df4\u88ab\u9ce5\u9aa8\u523a\u7834\u6d41\u8840\u800c\u6563\u4f48\u51fa\u4f86\u9e79\u9e79\u7684\u5473\u9053\u3002\u300d(\u6309\uff1a\u5b89\u6771\u5c3c\u2027\u6ce2\u767b\u57282018\u5e74\u81ea\u6bba\u8eab\u4ea1\uff0c\u4eab\u5e7461\u6b72)<\/p>\n\n\n\n

Ortolan has, on paper at least, been protected in France since 1999, but the law has been largely ignored, especially in Landes, in southwest France along the Atlantic coast, where the cult of the ortolan is strongest. Trappers there use a rig known as a matole, which features a live ortolan in a central cage to act as a decoy, surrounded by up to 30 or more small wire drop-cages baited with grain. Until recently, as many as 300,000 ortolan buntings a year were being taken, each fetching as much as 150 euros (about $175) on the black market. Even though the ortolan kill has declined in recent years, the species’ numbers have dropped like a stone. This is especially true of the small and increasingly fragmented population that breeds in western Europe and migrates through France, which has fallen more than 80 percent since 1980, faster than any other European songbird.<\/p>\n\n\n\n

\u5703\u9d50\u5f9e1999\u5e74\u958b\u59cb\uff0c\u5c31\u5df2\u7d93\u5728\u6cd5\u570b\u5217\u5165\u4fdd\u8b77\uff0c\u4f46\u662f\u90a3\u53ea\u662f\u5b98\u65b9\u7684\u6587\u66f8\uff0c\u5728\u57f7\u6cd5\u4e0a\u57fa\u672c\u662f\u88ab\u5ffd\u8996\u7684\uff0c\u5c24\u5176\u5728\u6717\u5fb7\u7701\uff0c\u4f4d\u65bc\u897f\u5357\u6cd5\u6ff1\u81e8\u5927\u897f\u6d0b\u5cb8\u7684\u5730\u65b9\uff0c\u5703\u9d50\u6599\u7406\u7684\u6587\u5316\u4f9d\u820a\u8208\u76db\u3002\u7576\u5730\u6355\u9ce5\u8005\u7528\u4e00\u7a2e\u53eb\u505a\u6597\u7bf7(matole)\u7684\u8a2d\u5099\uff0c\u4e2d\u9593\u6709\u500b\u7c60\u5b50\u653e\u4e86\u4e00\u96bb\u5703\u9d50\u4f86\u5438\u5f15\u540c\u4f34\uff0c\u65c1\u908a\u74b0\u7e5e\u845730\u500b\u6216\u66f4\u591a\u653e\u4e86\u7a40\u7269\u4f5c\u70ba\u8a98\u990c\u7684\u5c0f\u7c60\u5b50\u3002\u76f4\u5230\u6700\u8fd1\uff0c\u6bcf\u5e74\u9ad8\u9054300,000\u96bb\u5703\u9d50\u88ab\u6355\u6bba\uff0c\u6bcf\u96bb\u5728\u9ed1\u5e02\u53ef\u552e\u5f97150\u6b50\u5143(\u7d04\u7f8e\u91d1175\u5143)\u3002\u96d6\u7136\u5703\u9d50\u88ab\u6355\u6bba\u7684\u6578\u91cf\u5728\u8fd1\u5e74\u4f86\u6709\u6e1b\u5c11\uff0c\u4f46\u90a3\u500b\u9ce5\u7a2e\u7684\u6578\u91cf\u5df2\u7d93\u76f4\u7dda\u4e0b\u589c\u3002\u6700\u56b4\u91cd\u7684\u662f\u90a3\u4e9b\u5728\u897f\u6b50\u5b75\u80b2\u800c\u5206\u7fa4\u6578\u91cf\u66f4\u5c11\u4f46\u98db\u8d8a\u6cd5\u570b\u7684\u9ce5\uff0c\u5f9e1980\u5e74\u81f3\u5c11\uff0c\u5df2\u7d93\u5c11\u4e8680%\uff0c\u6e1b\u5c11\u7684\u901f\u5ea6\u9060\u9060\u5feb\u65bc\u5176\u4ed6\u7684\u6b50\u6d32\u9cf4\u79bd\u3002<\/p>\n\n\n\n

That is just one species out of scores that are targeted. In all, conservationists calculate, between 11 million and 36 million birds\u2014 songbirds, waders, ducks, quail, storks, raptors, basically anything with feathers-die each year during their migration through the Mediterranean basin. Only two countries in the region, Gibraltar and Israel, are relatively free from the problem. To this must be added the legal killing of migrants, not just traditional game species like waterfowl but enormous numbers of songbirds. Although the European Union’s 1979 Birds Directive\u2014the oldest conservation legislation in the EU-generally bans such killing, the union has issued what are known as “derogations,” basically exemptions. Firm numbers are hard to come by, but Bird Life estimates that another 1.4 million birds are killed legally, including almost half a million finches and almost 300,000 thrushes. Cyprus, when entering the EU, negotiated the right to continue to hunt half a dozen species of thrushes with shotguns for traditional Christmas meals. Taken together, it’s sometimes hard to imagine how any bird makes it out of Europe alive.<\/p>\n\n\n\n
